technical analysis by using
state-of-the-art methods. The service
to customers goes as far as
supporting with specific laboratory
tests related to all types of beverages.
An industrial trial can be easily
carried out as well providing a
loan dosing unit for a certain period
of time even free of charge.
In summary, Velcorin® technology
can make a substantial contribution
to speed up product development
and way to market. Independent
institutes confirmed that
Velcorin® has no influence on the
sensory profile of the beverage.
Hence, a full degree of freedom
is retained for product developers,
while at the operational level, no
or comparatively low investment
in the existing filling technology is
necessary. This significantly minimizes
the financial risk of a product
launch, while at the same time
expanding the utilization rate
of the bottling line. Hard Seltzer,
the somewhat different water,
is a growing trend in the beverage
industry that with Velcorin® can
unfold its full potential. M
DMDC hydrolyses within a few
hours in water and is therefore not
present in the final product.
From a manufacturing point of
view, the primary advantage lies
in the simple integration of the Velcorin
® dosing unit into a new or
existing filling line. Line capacities
between 600 l/h to 79,200 l / h can
be covered and there are no restrictions
with regard to filling systems
or packaging format. All
packaging lines can be equipped
with the technology, no matter if
they fill glass / PET / HDPE bottles
or cardboard packaging, cans,
KEGs, Bag-in-boxes. All materials
of the dosing unit in contact with
the product are approved and designed
for food contact. Those can
be exposed to the typical media
and temperatures used during
cleaning, disinfection or sterilization
procedures. Any process
or programming related changes
to the control system is therefore
not necessary. Communication
between the dosing unit and the
corresponding filler takes place
via a simple signal exchange.
Complementary to the implementation
of the dosing unit, Lanxess,
the global provider of Velcorin® and
the associated dosing technology,
also offers plant audits in order to
suggest potential improvements
from a hygienic and process point
of view. In addition to a team of
beverage experts, two in-house
laboratories are available to support
our customers. Both are set
up to carry out microbiological,
glass bottles are a secondary
choice. No matter what packaging
is used, it is mandatory to avoid
any secondary contamination from
the filling environment, especially
from yeasts that are present in the
production plant environment.
Lanxess’ own research has shown
that both, pure culture yeast Saccharomyces
cerevisiae and the wild
yeast Zygosaccharomyces bailii
with low inoculation rates of approx.
300 colony forming units
(cfu) /ml clearly show an increase in
four exemplary Hard Seltzer products
within a week. The particular
products had a pH value of 3.2, an
alcohol content of 5 percent and a
carbonation level of about 6.5 g/ l.
Stabilization is key
To safely microbiologically stabilize
the beverage without affecting sensory
attributes such as taste, color
or odor, the use of Velcorin® technology
is a fitting solution. Similar
to the spoilage sensitive beverage
categories of beer mix or wine
products, also Hard Seltzer can
rely on the proven technology of
cold sterilization. Velcorin® or dimethyl
dicarbonate (DMDC) is inline
dosed into the beverage immediately
before filling. It is highly efficient
even when used in small
quantities. The mode of action
is very simple: the molecule penetrates
through the cell membrane
and deactivates enzymes responsible
for the cell metabolism, thus
inducing cell death. The remaining
